ABOUT THE PROJECT

A Dining Room Worthy of the View.

Few dining settings come with a backdrop like La Jolla. The existing space, a traditional center-stage buffet setup with a hot line and salad bar, wasn't keeping pace with the location or the residents it served. Long lines, food quality challenges, and limited operational flexibility created the case for a full reimagining, one that prioritized food safety, transparency, and a dining experience genuinely worthy of its surroundings.


The project carried an added layer of complexity: the pandemic required a full pause and strategic reset mid-process. That pause ultimately sharpened the focus. When the dining room reopened after nearly two years of closure, it debuted with culinary theater stations that put food preparation on full display and a wine cellar anchored by a repurposed wine barrel from a local winery, serving as a custom corking station. Technology and simplified workflows reduced labor demands and minimized food waste, while the design gave residents a reason to return to the table with genuine excitement.

A coastal California collection, curated with intention.

The branding and interior design teams at SCOPOS worked in close collaboration to develop an art package that gives the Waters Edge brand a tangible, physical presence throughout the space. The collection draws from the California coast directly, coastal-inspired artwork, abstract pieces, and sculptural elements selected and arranged to feel cohesive without being predictable.


Rather than decoration, the art program functions as an extension of the dining environment itself, reinforcing the sense of place that makes this location distinctive. Every piece was chosen to complement the interior palette and contribute to an atmosphere that feels as considered and carefully crafted as the food experience it surrounds.

INTERIOR DESIGN

Sophisticated, coastal, and quietly stunning.

Designing the Waters Edge dining room at White Sands came with a clear directive: the ocean view is the star, and everything else supports it. The interior palette draws directly from the coast, blues and teals pulled from the water, light beige and white borrowed from the shore, resulting in a bright, sophisticated space that feels inseparable from its setting. High coffered ceilings reinforce the elegance of the main dining room, while pops of color in the accessories, artwork, and furniture keep the eye moving without competing with the panorama beyond the glass.


The journey toward the private dining room passes through the wine cellar, announced by bold blue glass tile and the rustic presence of a repurposed wine barrel centerpiece. The private dining room itself shifts the mood to something warmer and more intimate, with soft tones and elegant lighting that create a quiet sense of occasion. A bright blue wall tile recalling fish scales and a koi fish sculpture introduce a touch of playfulness, a reminder that even in its most refined moments, this space is still rooted in the living, breathing character of the California coast.
